Southwestern Rice Salad Ingredients

  • 2 cups long-grain rice (white rice or brown rice)
  • 1 can (16 oz) black beans, drained and rinsed
  • 1 can (12 oz) white corn, drained
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers
  • 3 cloves garlic, finely minced
  • 2 medium tomatoes, chopped
  • 1/3 cup fresh cilantro, finely chopped

How to Make Southwestern Rice Salad

Prep time: 20 minutes

  1. Cook your white or brown rice over the stove or using a rice cooker. Once it is done, let the cooked rice sit for 5 minutes. Then, rinse the rice with cold water, drain, and transfer to a large bowl.
  2. In a large skillet, heat vegetable oil on medium. Add the bell pepper, red onion, and minced garlic. Sauté until crisp-tender, or about 4 to 5 minutes. Stir often so that the garlic doesn’t burn.
  3. Add the cooked garlic, onion, and bell pepper to the rice. Stir to combine.
  4. Add the black beans, corn, tomatoes, and cilantro to the rice mixture.
  5. Put the olive oil, lime juice, ground cumin, cayenne pepper, salt, and black pepper in a small bowl. Use a wire whisk or fork to mix the dressing. Mix well to ensure that the oil and juice are fully combined. Taste to see if it’s up to your preferences. Add more salt or pepper if you wish.
