Ingredients

  • 500g lamb rump steaks
  • 1 1/2 cups long-grain rice
  • 2 1/4 cups chicken stock
  • 2 tbsp chopped pickled jalapeño chillies
  • 2 tbsp pickling liquid
  • 2 green shallots (diced)
  • 2 garlic cloves (chopped)
  • 1 tsp ground cumin
  • 1 tbsp extra virgin olive oil
  • 2 tbsp fresh lime juice
  • 1 bunch fresh parsley (coarsely chopped)
  • 2 small bunches fresh coriander (coarsely chopped)
  • Sliced long fresh green chilli
  • Fresh rocket
  • Lime halves

How to Make Mexican Green Rice with Lamb

  1. Process the coriander, parsley, pickled jalapeño, shallot, garlic, and pickling liquid in a food processor until a coarse paste forms.
  2. In a large frying pan, heat oil over high heat. 
  3. Add the lamb and cook for 2 minutes. Sprinkle the cumin over the lamb, then turn the lamb, and cook for a further 2 minutes for medium.
  4. Season as you’d like, then transfer to a plate. Cover with foil, then set aside for 5 minutes to rest. Thinly slice the lamb.
  5. Add oil in a separate pot and heat over high heat. 
  6. Pour in the dry rice grains and brown the rice. Add 3/4 of the coriander and parsley mixture into the pan and stir until the rice grains are evenly covered. Stir in the lime juice. Let it cook for a minute or two.
  7. Add the chicken stock to the pot and bring to a boil. Reduce to a low simmer once it boils, then cover the pot. Cook for 15 minutes or until the rice is tender.
  8. Divide the rice mixture among serving bowls and top with the lamb. 
  9. Dollop the remaining herb paste over the lamb. Top with rocket and extra coriander. 
  10. Serve with lime halves on the side.

Recipe Tips

  • For a milder dish, remove the seeds from the jalapeños. If you prefer more spice, leave the seeds intact or add an extra pepper.
  • Use fresh herbs for the green rice to maximize flavor and achieve a vibrant green color.
  • Allow the lamb to rest for 5-10 minutes before serving to lock in the juices.
