Chicken and Vegetable Curry Rice Recipe

  • 4 to 6 cups rice
  • 2 tablespoons olive oil

Recipe Directions

  9. Once boiling, reduce heat and simmer for 10 to 15 minutes or until veggies are tender.
  10.  Return the chicken to the pan, stir, and let simmer for an additional 2 to 3 minutes.
  11. Season to taste.
