1 1/2 cups long-grain white rice
2 cups chunky salsa (mild or spicy)
2 cups chicken broth
1/4 cup chopped onion
1 tablespoon garlic (diced)
1 cup black beans (drained and rinsed)
1 tablespoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1 to 1 1/2 cups of shredded cheese

Bring a large pan or pot over medium heat. Add oil and swirl to coat the pot.
