  • 2 cups milk
  • 1 cup fresh orange juice
  • 300ml pouring cream
  • 1/2 cup caster sugar
  • 1/2 cup brown sugar (firmly packed)
  • 1 egg
  • 1 tsp vanilla bean paste
  • 2 cinnamon sticks
  • 3 whole cloves
  • 2 whole star anise

Mulled Wine Pears with Vanilla Creamy Rice Recipe Directions

  1. Preheat the oven to 140-160 degrees Celsius.
  2. In a heavy saucepan over low heat, combine the red wine, orange juice, brown sugar, cinnamon sticks, cloves, and star anise. Cook and stir for 2 minutes or until sugar dissolves.
  3. Add the pears and orange discs. Increase the heat to medium-high, then bring to a boil.
  4. Next, reduce heat to low. Simmer, partially covered, for 35 minutes or until the pears are just tender. Remove from heat and set aside to cool slightly.
  5. Grease a 1.5-liter oven-proof dish. Whisk the milk, cream, caster sugar, egg, and vanilla in a jug.
  6. Pour the milk mixture into the prepared dish, then add the rice. Stir to combine.
  7. Cover the baking dish with foil and bake for 1 hour and 15 minutes or until the rice is tender and golden. Set aside for 5 minutes.
  8. Transfer the pears, orange, cinnamon, and star anise to a bowl. Keep warm.
  9. Strain the syrup into a saucepan and discard the cloves. Bring to a boil over medium-high heat.
  10. Simmer for 5 minutes or until reduced by half.
  11. Top the creamy rice with the mulled wine pears, oranges, spices, and warm syrup.
  12. Serve.
