  • 1 1/2 teaspoon white urad dal
  • 10 cashew nuts
  • 2 teaspoons oil
  • Salt to taste

  1. Rinse the Basmati rice and cook it in a rice cooker. Once the rice is done cooking, let it cool.
  2. Heat oil in a heavy-bottomed pan over medium-high heat.
  3. Add the mustard seeds and wait until they crackle.
  4. Add urad dal and saute until the dal begins to turn brown.
  5. Add the finely chopped onions and curry leaves. Saute until the onions turn translucent.
  6. Put the cashews in the pan. Cook for 1 to 2 minutes. Stir frequently while frying.
  7. Add in the cooled rice, ground pepper, and salt. Mix well.
  8. Ensure that the rice grains are coated equally. Cook for 2 to 3 minutes. Add more salt if needed.
  9. Serve hot.
