Apart from a couple of items, almost everything in this ingredients list can probably be found in your cupboard or freezer. If you don’t have frozen shrimp and broccoli florets on hand, fret not, you can always find them in your nearest grocery. When buying shrimp, the best one to get is a bag of 12 ounces, containing 21-30 per pound. Frozen, uncooked, peeled, and deveined shrimp is the most convenient as the only thing you’ll have to do is take it out of the freezer to defrost it before cooking.
All of the ingredients in this list are needed, except for the red pepper flakes which are optional. Additionally, if you can’t find tamari in the store, you can always make use of soy sauce instead.
There aren’t a lot of steps required to make this recipe! Like most recipes, it’s always best to prepare all the ingredients and tools that you need in the kitchen beforehand so that you won’t have to worry about missing any crucial item or step. Get cooking!
Step 1. Using a large Dutch oven, put in the vegetable oil and heat on medium high. Once it’s simmering, add in the onion. Cook and stir occasionally for about 8-10 minutes or until the onion softens.
Step 2. Add in your rice. For this recipe, we used long-grain white rice but you’re welcome to use any type that you like. Add 2 cloves garlic, a teaspoon of ginger, and a teaspoon of salt. If you’re using red pepper flakes, add them in as well. Cook and stir occasionally for 3 minutes or until the rice crackles on the pan.
Step 3. Pour in the chicken broth and the 3/4 cup water. Bring the water and chicken broth mixture to a boil. Turn the heat to medium-low, cover your Dutch oven, and simmer for 10 minutes without disturbance. Add your uncooked, peeled, and deveined shrimp and broccoli after. Stir to combine.
Step 4. Cover the pan once more and simmer until the rice is tender, the broccoli can be pierced, and that the shrimp is cooked through. Stir every 10 minutes or for 25 to 30 minutes more.
Step 5. In a small sauce pan, put in the honey, 2 tablespoons of tamari or soy sauce, and the remaining clove of garlic, simmering over medium heat. Add 1 teaspoon cornstarch and 1 tablespoon water in a smaller bowl, stirring until the cornstarch dissolves. Pour in the cornstarch mixture into the simmering sauce and stir until it thickens. Remove from heat.
Step 6. Once the honey garlic shrimp rice is ready, drizzle the sauce over it before serving.
This last step is optional, but if you want to add a little more flavor, you can also grate cheddar cheese or sprinkle parmesan cheese over the rice before drizzling it with the sauce.
Leftovers can be stored in the fridge using an airtight container and you can keep them for up to 3 days. To heat up this dish, simply chuck it in the microwave or warm it over the stove. You can always add a little more sauce over the leftovers if the taste isn’t up to par anymore.
