  • 1 cup white rice
  • 2 cups chicken stock
  • 2 cloves garlic, sliced
  • 8 slices bacon
  • 4 large eggs
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 tbsp. hot sauce
  • 2 avocados, sliced thinly
  • 1 cup baby spinach
  • 1 cup tomatoes, diced
  • Extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper


  1. Cook rice in a small saucepan with half the garlic and chicken stock. Fluff with a fork or rice paddle once done.
  1. In a small bowl, combine sour cream and spicy sauce. Mix thoroughly and set aside.
  1. In a large cast-iron pan over medium heat, fry bacon till crispy. Transfer to a dish lined with paper towels using a slotted spoon. Make sure to reserve 2 tablespoons of bacon fat for the eggs. 
  1. Fry eggs in bacon grease on the same iron pan. Scramble until done and set aside.
  1. Warm 1 teaspoon olive oil in a small pan over medium heat. Add garlic and toast until light brown. Add spinach and season with salt and pepper. Heat until the spinach is barely wilted.
  1. Assemble the BLT bowls by adding the rice to a bowl. Top with bacon, cooked spinach, tomatoes, avocado slices, and scrambled eggs. Season with salt and pepper and serve.

Cooking Notes and Tips

To add more fiber to the dish, replace white rice with brown rice.

In a blender, combine the avocado, cilantro, lime juice, olive oil, cumin, chili powder, and salt. At high speed, combine all of the ingredients until smooth. Set aside until ready to use.
