For size, an instant pot with a 6-quart capacity is the most ideal to use, but you can cook this with any pot size as long as you adjust the recipe according to how much your unit can handle.

Ingredients:

  • 1 1/2 cups Jasmine rice or other long-grained white rice, washed and drained
  • 1 lb chicken breasts (skinless and boneless)
  • 1 1/2 cups chicken broth (or water)
  • 2 cups homemade teriyaki sauce (see recipe below)
  • 1/2 tsp garlic powder
  • 1/4 tsp ground ginger
  • 2 tsp olive oil
  • 1 tbsp mirin (rice wine) or rice vinegar
  • 2 pcs bell peppers, chopped
  • 2 pcs medium-sized carrots, ribboned
  • 1 head fresh or frozen broccoli, chopped

Toppings

  • Sesame seeds
  • Salt
  • Freshly ground black pepper
  • Hoisin sauce
  • Shredded carrots
  • Green beans or snap peas
  • Green onions, chopped
  • Sriracha hot sauce / crushed red pepper flakes

Materials You’ll Need:

Procedure:

  1. Rinse the rice with a strainer or rice washer until the water flows clear.
  2. In the instant pot, combine rice and 1 1/2 cups water or chicken broth. Spread the rice out in a single layer, making sure it is well coated with water or broth.
  3. Mix salt, pepper, mirin or rice vinegar, garlic powder, and powdered ginger in a medium bowl. Add in skinless chicken breasts and season well. Place chicken pieces on top of the rice.
  4. Add 1/4 cup teriyaki sauce. Set the valve to seal and close the lid. Make sure the valve on the instant pot is set to sealing, not venting before cooking.
  5. Set to manual or pressure cook and cook for 4 minutes on high pressure.
  6. Allow the pressure cooker to release naturally for 10 minutes after the timer sounds, then quickly release the remaining pressure.
  7. In a big pan, heat the oil while the chicken rice mixture cooks. When the pan is heated, add the fresh vegetables and bell pepper. Cook, stirring occasionally, and adding a spoonful of teriyaki sauce to coat them until they are soft.
  8. Open the instant pot and remove the chicken. Add chicken to a chopping board to rest for 5 minutes. Using a fork or a rice scooper, fluff the rice.
  9. Return the chicken and veggies to the pot with the rice, cutting against the grains.
  10. Spoon portions of the chicken rice using a rice scooper on bowls and top with the appropriate quantity of teriyaki sauce.
  11. If preferred, add sesame seeds, green onions, green beans or snap peas, shredded carrots, and sriracha or crushed red pepper flakes on top of the teriyaki chicken bowls.

Teriyaki Soy Sauce Recipe

This thick sauce smothered over cooked chicken breast provides this teriyaki chicken recipe its distinct tangy flavor.

Ingredients:

  • 1 cup water
  • 2 tbsp corn starch
  • ¼ tsp garlic powder
  • ¼ cup low sodium soy sauce
  • 1 tbsp honey, or more to taste
  • 5 tsp packed brown sugar
  • ½ tsp ground ginger
  • ¼ cup cold water

Procedure:

  1. In a medium saucepan, combine 1 cup water, soy sauce, ginger, garlic powder, brown sugar, and honey. Cook for approximately 1 minute or until thoroughly heated.
  2. In a cup, combine cornstarch and 1/4 cup cold water; mix until completely dissolved. Toss the cornstarch slurry into the saucepan. Cook and whisk the sauce for 5 to 7 minutes or until it thickens.
  3. Seat aside and cool. Place in an airtight container until ready to use for the chicken rice.
