Materials Needed:

  • Baking dish
  • Stove
  • Saucepan
  • Large bowl

Ingredients:

  • 1 cup white long-grain rice
  • 2 cup broccoli florets
  • 1 lb. boneless, skinless chicken breasts or rotisserie chicken, cut into 1-inch cubes
  • 1 tbsp. extra-virgin olive oil or unsalted butter
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 2 ½ cup condensed cream of chicken soup
  • 1 cup cream cheese
  • 1 cup shredded cheddar
  • 1/4 cup bread crumbs (panko)
  • Kosher salt
  • Freshly ground black pepper
  • Fresh parsley, chopped (optional)
  • Garlic powder (optional)

Directions:

  1. Heat butter or heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, turning often until the onion is tender and garlic is aromatic.
  2. Season the chicken with salt and pepper. Add to the skillet. Cook, stirring constantly, for another 6 minutes or until golden.
  3. Combine the rice, sour cream, and 1 cup of chicken soup in a mixing bowl. Add to the saucepan. Cook, stirring occasionally until the long grain rice is cooked.
  4. Add the remaining 1 1/2 cups broth, broccoli, and cream cheese. Continue cooking, stirring occasionally, until the broccoli is soft, about 10 minutes. Remove from heat.
  5. Season the chicken and broccoli mixture with salt, black pepper, and bread crumbs. Add garlic powder if desired.
  6. Add chicken mixture to the prepared baking dish. Cover tightly and cook for 20 minutes in a preheated oven. Sprinkle shredded cheddar cheese on top. Remove the lid and continue to bake uncovered until the cheddar cheese is melted for about 5 minutes.
  7. Serve cooked chicken and broccoli and enjoy. Feel free to top the casserole with the remaining cheese, if there’s still any.
