Materials You’ll Need:

  • Slow cooker or rice cooker
  • Saucepan or grill pan (not needed if you’re using a rice cooker)
  • Stove

Ingredients:

  • 4 large boneless skinless chicken breasts or chicken thighs, cubed
  • 1/2 cup Jasmine rice (or any long-grain white rice)
  • 1 can of black beans, drained and rinsed (7 ounces or 200 g)
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil
  • 1 large clove garlic, minced
  • 1/2-1 tsp chili powder or 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1 tbsp cilantro, chopped (optional)
  • 2 large green, red or yellow bell peppers, cut into strips
  • 1 cup chicken broth or stock

Toppings:

  • Fresh tomatoes, diced
  • Lime juice
  • Cilantro, finely chopped
  • Shredded Romaine lettuce
  • Frozen corn, boiled
  • Red onion, chopped
  • Avocado peeled and sliced/mashed
  • Shredded cheese
  • Grilled chicken, chopped

Dressing:

  • 2 tbsp olive oil
  • 3 tbsp freshly squeezed lime juice
  • 1 tbsp finely chopped cilantro
  • 1 cloves garlic, crushed
  • 1/2 tsp brown sugar
  • 1/4 tsp Cumin, grounded
  • 1/2 tsp salt
  • 1/2-1 tsp red chili flakes or 1 tbsp green chilies 

Procedure (using a Rice Cooker)

  • Turn on the rice cooker. Add olive oil to the inner pot and saute onions, garlic, and chicken breast. Cook until the chicken breast is slightly brown.
  • Add chopped cilantro, lime, rice, black beans, bell peppers, spices, and chicken stock or broth. Close the rice cooker and cook for 20-30 minutes.
  • In a bowl, add all the ingredients for the dressing together. Mix well.
  • Once the rice is cooked, fluff the rice with a rice scooper or fork. Put on a plate and serve with the dressing and toppings.

Procedure (using a Slow Cooker)

  • In a saucepan or grill pan, heat oil in medium-high heat. Saute onions, garlic, and chicken until the chicken is slightly cooked.

  • 1 14.5 oz can tomatoes, diced
  • 1 4 oz can green chiles. diced

  • 1 cup jasmine rice or basmati rice

  • 1/2 tsp freshly ground black pepper
  • ¼ tsp chili powder
  • 2 cups chicken stock or water
  • 1 cup shredded cheddar cheese

  • Half a lime

  • 1 (15.25-ounce) can whole kernel corn, drained
  • 1 (15-ounce) black beans, drained and rinsed
  • 2 Roma tomatoes, diced
  • 1 avocado, peeled and diced
  • 2 tbsp chopped fresh cilantro leaves
  • ¼  tsp chili powder
  • 1 cup grilled chicken, shredded

For the Sauce:

  • 1 cup sour cream
  • 1 1/2 tbsp lemon juice
  • 1/2 tsp sugar
  • 1/4 cup mayonnaise
  • 1/4 tsp dry mustard
  • 1 green onion, minced

Procedure (using a Rice Cooker)

  • Turn on the rice cooker and add olive oil.
  • Saute onions, garlic, and chicken breast. Cook until the chicken breast is slightly brown.
  • Add cauliflower, rice, black beans, broth, and salsa into the rice cooker. Cook for 20-25 minutes or until the rice is cooked.
  • For the sour cream, mix all ingredients in a separate bowl.
